Ingredients

3–4 tbsp Aromatic Kitchen Red Curry Paste

400ml coconut milk

500g protein of choice (chicken, tofu, prawns, chickpeas)

1 cup mixed vegetables (e.g. capsicum, zucchini, green beans)

1 tbsp oil

Optional: lime wedges, Thai basil, fresh chilli, fish sauce (if not vegan)
Method

Cook the Paste
– Heat oil in a pan or wok over medium heat.
– Add Red Curry Paste and sauté for 1–2 minutes until aromatic. -
Add Coconut Milk
– Stir in the coconut milk and bring to a gentle simmer. -
Add Protein & Veggies
– Add your choice of protein and vegetables.
– Simmer for 10–12 minutes, or until everything is cooked and the sauce thickens. -
Garnish & Serve
– Finish with fresh herbs, lime juice, and sliced chilli.
– Serve hot with steamed jasmine rice.
