Ingredients

  • 3–4 tbsp Aromatic Kitchen Red Curry Paste

  • 400ml coconut milk

  • 500g protein of choice (chicken, tofu, prawns, chickpeas)

  • 1 cup mixed vegetables (e.g. capsicum, zucchini, green beans)

  • 1 tbsp oil

  • Optional: lime wedges, Thai basil, fresh chilli, fish sauce (if not vegan)

Method

  1. Cook the Paste
    – Heat oil in a pan or wok over medium heat.
    – Add Red Curry Paste and sauté for 1–2 minutes until aromatic.

  2. Add Coconut Milk
    – Stir in the coconut milk and bring to a gentle simmer.

  3. Add Protein & Veggies
    – Add your choice of protein and vegetables.
    – Simmer for 10–12 minutes, or until everything is cooked and the sauce thickens.

  4. Garnish & Serve 
    – Finish with fresh herbs, lime juice, and sliced chilli.
    – Serve hot with steamed jasmine rice.
